Making It Healthy

Tonight for dinner was Chicken Parm, Bruschetta, and Caprese Salad. I know what you’re thinking. Yeah, that isn’t exactly healthy. Well, it can be.
I lightly sprayed boneless, skinless chicken breast with olive oil put on some Italian seasoning and grilled them. After grilling them, see no frying or breading here I put it together with some homemade sauce. And, by homemade I mean, homemade. As in I blanched the tomatoes peeled them cooked them down forever and then canned the sauce. So, this sauce had nothing in it but tomatoes and some seasoning. Topped the chicken off with a slice of tomato some fresh basil and a little fresh mozzarella. And, well voila much healthier chicken Parm.
The Bruschetta was also homemade, again tomatoes some seasoning and some balsamic vinegar. The worst part of the meal was most definitely the bread we are it on, and even that wasn’t that terrible for you. It was Against The Grain’s gluten free baguette that I toasted and then topped with the tomato mixture. To finish off the complete meal we had Caprese Salad.
Fresh grape tomatoes, fresh basil, fresh mozzarella, a drizzle of olive oil, and some balsamic vinegar to make it just right. It was a pretty fantastic dinner. And, well there is leftovers which will be dinner tomorrow night since the husband won’t be home till late.
