Would you look at that. There is sun and blue skies. I almost forgot what that looked like as we have seen neither in days.
I did a lot of errands today and ran around town getting things done and the grocery shopping done for pretty much the week.
I also hit the treadmill for 10 minutes which was my goal to be at by the end of this week. I’ve decided that next week I’m going to keep my time at 10 minutes but increase my speed by a 10th of a mile every day. I think I’ll rotate weekly between adding time and speed. I think this will work for me and if not than I can always change it later.
I’m happy to say I’ve met my goals I’ve set out for myself this week, which is what it’s all about. I didn’t complete all of the exercises I scheduled for the week but my exercise goals for the week were met so it’s a win. I didn’t bike at all this week as the weather was not allowing that, and I only substituted a different activity on one of the days that I was going to bike. However, I did do my treadmill workout on that day I flaked on adding a different activity in, and that was a main goal for the week so I’m happy with how I did.
I’m feeling pretty good about this past week. And, Metabolic Aftershock is no joke. I’ve only done a week so I can’t say I’ve seen any change yet it’ll take some time, but I’m enjoying the workouts and I know I’m pushing myself to the limit which is a good thing. So yeah, I’m looking forward to Week 2.
I’m going to enjoy the rest of my Saturday and the rest of my weekend. Hope you’re achieving all your goals you set for yourself.
I’m extremely proud and happy with myself tonight. I had a great Non-Scale Victory tonight. I went out for dinner with friends tonight at one of my favorite Mexican restaurants, and stayed completely compliant.
Now, normally when I eat at a Mexican restaurant it’s a complete gorge fest. I eat way too much and leave feeling overstuffed and feeling sick. I will chow down on the chips, salsa, and queso like there is no tomorrow. And, then I follow all of that nonsense up with enchiladas. Yeah, it doesn’t get much more unhealthy than that.
However, tonight I said I only have 3 more days left and I can, I have, and I will complete this Whole 30. So, I passed on the chips and queso and the enchiladas that I love so much. Instead I ordered grilled chicken fajitas with grilled veggies with pico and guac. Oh and had my fajitas in lettuce wraps. Guess what it was delicious and filling. And, well the best part is I consumed probably at least a third of the calories I’d normally consume and I have no feelings of guilt nor do I feel like I’m ready to explode.
Now don’t get me wrong would I love to have an enchilada you bet I would but I think from now on I’ll be making a choice between the enchilada and the chips and queso. Also I’ll have a single enchilada instead of a huge platter of them. I mean really no one needs to eat that much food at once anyway.
This was my dinner and it was so satisfying I’m definitely full and feeling really awesome about my choices and not going for the indulgence.
And, another win I found that I really like there fajitas. I’ve never gotten them before because I always get enchiladas. I will definitely be making this choice again and won’t be regretting it.
Three days left and then it’s the reintroduction phase so I am carefully planning that out and figuring out what foods I’ll be reintroducing which I plan on skipping all together and on what days I’ll be reintroducing said foods. I’m taking this seriously and really think that this time I’m going to make this healthy food choices and lifestyle stick. I’ve got a plan already to go for those occasions when I slip up and I know that they will happen from time to time, but having a plan already in place is definitely key to get me back on track as quickly as possible so that it’s not a complete free fall into a downward spiral. I am going to succeed.
Today marks the half way point. That’s right 15 days of whole, clean eating, no artificial sweeteners, no added sugar, no grains, no soy, no legumes, no alcohol, and nothing processed.
I’ve found that it hasn’t been as hard as I first thought it would be. Yes, it requires thinking and planning ahead, but I also know in order for me to eat healthy and lose weight I need to do that anyway. Plus, it’s really nice to go to the grocery store once and be done with it. One trip and then I have everything I need to make all of my meals for a week. Yes, I know I eat a lot of the same thing, but when it’s only one person at home at the moment you have a ton of food left after you make a recipe. Plus, when I give myself fewer choices to eat it makes it easier to stay within parameters. It’s when I have tons of choices of food that I go overboard and may not make the best decisions food wise. I am of course freezing some of the food that has been made so that I can eat at a later time, but if I can make a meal and have it cover a couple of days it’s less work for me to do. Yes, it can get a bit boring eating the same thing over and over but it’s for a couple of days and than a new week and new meals sprout up.
Anyway, half way point and I’m doing really well. I’ve already started looking for recipes for next week and I have 2 new cookbooks coming. Plus I have been looking through the cookbook I bought last week. Nom Nom Paleo Food For Humans I’m actually not as excited about her cookbook as I thought I was going to be. I love her website which if you haven’t checked it out you should do so by clicking right here. I’ve found a ton of recipes that I’ve enjoyed on her webpage and as well as her Pinterest page. The cookbook I haven’t found anything that I’m wanting to try. I’ll be looking through the book more this week to see if I’m going to try something next week.
I tried 3 new recipes today.
Breakfast was “muffins” they were made with egg, kale, peppers, and breakfast sausage. They are really good came out fluffy and filled me right up. However, I’m reminded that I’m not crazy about breakfast sausage. I had gotten turkey breakfast sausage but I wasn’t to thrilled with it. I think it’ll take a few tries to see if it’s something that I really don’t like or something I need to acquire a taste for. We shall see its breakfast for the next couple of days.
Lunch was turkey roll ups with lettuce since I had an appointment to go to. It was easy to take on the road and eat in the car. I really like these for on the go or when I need a quick meal. They’ve come in handy the last couple of weeks. I finished of my lunch with melon.
Dinner was awesome sauce! I had made turkey meatballs in the crock pot yesterday in preparation for tonight’s dinner, and new that I wouldn’t have time today to throw them together. I paired them with zucchini noodles. This isn’t the spiral cutter I have, but it’s super similar
Seriously get one of these. They make amazing veggie noodles and super easy to use and works effortlessly. I love it and am so glad I purchased this little gadget worth every penny. Can’t wait to try some other veggies in it. I sautéed up the zucchini noodles and tossed it with the meatballs for a delicious filling dinner. I finished off my meal with “baked” apples again. It was something that hit the spot perfectly.
I had made protein balls today as well, but they didn’t come out as planned. They were too runny and I’m not sure if it’s because my almond butter wasn’t mixed enough or my coconut butter wasn’t at its optimal temperature. They came out as flat cookies instead of balls, and are fine as long as they are kept cold, but as soon as they warm up the become the consistency of almond butter, just with a little extra flavor. Still really good just messy to eat. I’ll try making them again with better mixed almond butter and coconut butter at the correct temperature. They still need to be kept cold so these may not be a great snack to take on the go. I’ll have to see if I can find something else to make to fill that need.

Today is Day 12, I’ve been Whole 30 for a dozen days! I’m impressed with that. Every day is a little easier.
Today’s breakfast was sausage and eggs. And, don’t mean to toot my own horn, but TOOOOOTTTTTT!!!!!!! I nailed the egg rounds today. Instead of reheating the sausage in the frying pan I just warmed it up in the microwave which meant that nothing had been cooked in the frying pan when I put the eggs in, and well that’s the trick. The eggs came out awesome, and the next time I make these I’ll actually be able to eat it as a muffin. I’m pretty excited about that.
A had Mexican Chicken soup with avocado and fresh cilantro for lunch with an apple. I decided to have this for lunch instead of dinner today since I’m nannying this evening and my lunch I had planned is much easier to travel with and can be munched on a lot easier than eating a bowl of soup.
Dinner is turkey roll ups with spinach and avocado and a side of melon. Much easier to transport than soup.
Zumba class was awesome. I had a great time broke a sweat and burned some calories. We did some new routines and even did some routines that we hadn’t done in a while. I like that because doing the same routines over and over can get quite boring.
I also did all of the grocery shopping for next week so I’m ready to start making some yummy meals.

Today, was the first day of being back on track, and I did it. I stuck to the exercise and food plan.
I’m proud of myself.
I attended zumba and yoga this afternoon, along with that I stuck to my menu.
I’m ready for tomorrow. I’ll be doing my workouts, and also some cleaning. My house is a bit of a disaster right now. I also need to whip up baked ziti for dinner tomorrow night.
I am going to stay on track.
I started the Beta Phase of T25 this week. Today was Day 2, and well I’m still breathing so that’s a good thing.
In order to prepare myself for the coming phase I watched the Beta videos on Sunday. I’m not sure if that was a good thing or not. At first I was like yeah I can do this. Of course I wasn’t moving I was just watching them work. Well as the 25 minutes progressed and the people with Shaun T were starting to fall on the floor I began to get nervous. What! If they are struggling I’m screwed.
So, yeah it was good to see what was coming, but of course what I saw pretty much psyched me out.
Monday was a bit rough to get myself motivated to do workout 1. But, I did it. Yes, there was some struggling, but hey I was struggling at the beginning of Alpha too. Today was a little easier, and actually today I wouldn’t say I Nailed It, but I was pretty darn close.
At the end of this 5 week period u think in going to be seriously impressed with myself.
Here’s to Beta Phase of T25!
Today, I did something I wasn’t sure if ever be able to do. So be warned this entire post will be me tooting my own horn. But, hey I’m proud of myself and had a major accomplishment for me anyway.
First I ran for 15 minutes straight. That’s right I started running and went for 15 minutes before going back to walk. The longest I’ve run at once up until today had been 10 minutes. So yeah an extra 5 minutes. I know for you runners out there it’s nothing, but for a girl that is not a runner this was huge. Second I didn’t feel like I was going to die nor was I gasping for breath at the end of the 15 minutes. So this means 2 things I can run longer and a bit faster. Two things I will be working on.
Second in those 15 minutes I ran a mile. Now I know that is not a fast mile at all, but hey it’s a start. I’m hoping to one day make it to a 10 minute mile and well I only have another 5 minutes to shave off. I can and will do it. Run training is really working.
I think I’ll be a real runner yet.
