Got To Get Back On Track

Missed yesterday’s post as I had a late start to the day, work, errands, and life occurred. 

I couldn’t fall asleep Monday night which meant when the alarm went off at 6:30 I was not having it. Not a morning person added in with less than 5 hours of quality sleep makes getting up that early not going to happen. 

So, with the repeated hitting of the snooze button yesterday morning I did not do any work outs as it was get up and roll into the office. However, the extra 90 minutes of sleep was something I needed. I have to be careful and make sure I get sleep or it’ll come back to haunt me. As in I will be so tired and worn down I can’t function and will also end up getting sick. So, as much as I’m a bit disappointed in myself for not working out I know that getting a few extra minutes of shut eye will be better for me in the long run. 

I had a great evening last night as friends invited the husband and I over for dinner. My friend from Junior League, boyfriend is a food reviewer and a big foodie. He decided to make Pho from scratch so they invited some friends over. I have never had Pho, so I was in for something new. 

They were great also to make sure that there was no gluten in the food that was made. 

Let me tell you it was AHHHHHH-MAZING!!!!

For his first time making it and from scratch at that he did a great job. 

So, whoooo to new foods. 

Today, I did my Metabolic Aftershock workout. However, I bailed on the treadmill as I was exhausted, sore, and hungry. I pushed through the aftershock workout and got myself ready for work. 

I went to the new Fresh Market that recently opened up next to my office and found some new gluten free goodies. I used to love Cheez-Its well okay I still love them I just can’t eat them since they are full of gluten. So needless to say I miss them but it’s a good thing I can’t have them because I’d eat a whole box if I had them in front of me. Today I found some cheddar crackers that are gluten free and decided to give them a whirl as I’ve been on the hunt for a substitute for my beloved Cheez-Its. I think I may have come close with Milton’s Cheddar Crackers. They are pretty tasty no weird aftertaste, however I feel they are more of a Cheese Nip taste as opposed to Cheez-It but for a little snacky treat every once in a while they will work. Plus they have a ton of other flavors that I will have to try out. 

Tomorrow is another day and I plan on hitting my workouts hard. And, I really need the rain to stop. Mother Nature gave us a 2 day break with great sunny warm weather and now we are back to nonstop rain. Ughhhhhh!!! That seriously isn’t helping my motivation. 

Happy Hump Day

Crazy Busy Day

Today has been crazy. I’ve been going since 7:30 this morning. I got up made myself breakfast, packed myself a lunch, and headed out to do a full days worth of stuff. 

The morning started off with a haircut, followed by some pampering me time. My eyebrows were in serious need of attention, so those were taken care of, followed up by a mani/pedi. Because, well my nails needed some attention after all the moving and cleaning I’ve been doing. 

After my pampering session it was off to pick up some much needed organizational baskets for the bathroom. So that had me running around to different stores to get what I wanted and needed. 

Then it was off to work for 4 hours. Work was pretty uneventful, but by 3 when I arrived I was starving and promptly ate my lunch. 

I didn’t get home till nearly half past 7 and of course my dogs were acting like I had left them for months. I am happy to say that they didn’t escape the yard nor destroy anything so hey that’s a win. 

And, well now I’m enjoying some dinner and watching some AGT. 

Glad that even with the craziness of the day I was able to plan and stay on plan. Whoop making progress. 


Okay, so I finished the Whole 30 and survived, learned a whole lot about food and myself. However, tonight I’m going to be eating some Mexican. And, well I can’t wait. I love Mexican food and I plan on eating it tonight.
However, I am quickly developing a plan for this little night out eating. I will have some chips and salsa because I love chips and salsa. However, I’m going to not eat them until I’ve consumed an entire day’s worth of calories in one sitting. 10 chips and salsa will be my limit.
For dinner I will be having enchiladas because well those are my absolute favorite and the place we are going has an excellent enchilada sauce that is gluten-free. I’m going to eat my 2 enchiladas with a little rice and that will be it. I’m sure I could, actually I know I could eat way more than that but I won’t. I’ve developed my plan and that’s what I’m going with.
I’ve come a long way and lost a lot of weight and inches the past month and no need to sabotage it by overindulging tonight. Especially since Wednesday night there was some indulgence and Thursday there was a bit of indulgence too. Yesterday I did really well with my clean eating as well as today for breakfast and lunch. So, yes I will be indulging a bit but I’m going to keep it in check.
Tomorrow, is weigh-in day for my DietBet so I need to definitely keep myself on track and moving towards what I want.
Today I also got my email for the first week of FitIn15 with JessicaSmithTV. It gives the break down for what the workout routine is for this coming week. The plan for this week has 3 days of 15 minute or less workout and 3 days of taking a 10-15 minute walk. So it’s something easy to add in to your life it’s 15 minutes. Seriously go check her out on YouTube JessicaSmithTV and subscribe to her it’s not too late to join the challenge. She’s worked it out so that it can work with any fitness level. I’m going to stick to the beginner version right now, which is just doing the 15 minute workouts because I am adding them in addition to my fitness classes that I’m already doing. However, she provides links to keep going if you need more or want more. When you join the challenge you’ll get her mailing which breaks it all down for you. And, well week 1 looks pretty doable. I’m excited about it. It’ll be the first challenge like this I’ve ever done. And, this added with my DietBet is just what I need to keep me on the right track.

27 Days And Eating Leftovers

Today marks 27 days of being Whole 30, and in less than 24 hours the husband will be home. Yayyyyy!!!!
With the impending arrival of the husband I’m trying to finish up all of the leftovers in my fridge. Since this week’s menu was a bit over-filled. I sort of forgot last week when I made the meal plan for the week that there were several days where I wouldn’t be home to eat as I was partaking in holiday festivities.
Of course with whole, clean eating your food goes bad, it doesn’t have the shelf life of all the prepackaged crap that I’ve eaten in the past. So, I’ve made everything I had planned on making this week but the leftovers are a bit more than I had planned. And, the items I made this week I’m just not sure how well they’d freeze. So, eat them I am.
Breakfast, was sweet potato puffs, since I had half of one still sitting in the fridge that needed to be eaten.
Lunch was the last of the Italian sausage and eggplant strata. I’m glad I only made a half batch of that because wow there would of been way too much if I had made the full recipe. Although, this I think would freeze fine. It is delicious and a way healthier alternative to eggplant parm. And, well I’ve frozen eggplant parm before with no problems, this would actually freeze better since the sauce on it is not thin or very liquid at all. The sauce consisted mostly of chopped tomatoes, spices, and then an egg to help thicken it up. I may have to make it again while the husband is home but with zucchini instead since he is not a fan of eggplant. I also had some more of the pizza veggies I had made last night.
Now, let me tell you about turkey pepperoni. The pizza veggie recipe called for pepperoni, so I opted to try some turkey pepperoni. Holy Crow! I love it! It’s dangerous having that stuff in my house, because I definitely could go sit down and the entire thing in one sitting. I’m not, because well one thing that has definitely happened with this Whole 30 is I realized I really do have willpower over food, and I’m more conscious of what and how much I am eating. I will be adding pepperoni to my salads and maybe even my turkey roll ups to finish off the leftovers. Lunch was finished off with pineapple since I still have a bit of that leftover to finish off as well.
Dinner was the piña colada chicken which I poured over the last of the head of cauliflower I had. I could of riced the cauliflower but well let’s just be honest I was too lazy for that. I added some more pineapple to it.
Only a little bit of leftovers are left which will be tomorrow’s lunch and then it’s onto new meals for the husband and I.
And, here’s the photo of my food. Don’t mind the fact that my lunch is served in a baking dish, it was just that the last of the strata was in it and I figured what’s the point of dirtying up a plate when this is already dirty and needs to be cleaned. Plus it all fit so nicely.


Trying To Find The Motivation

I woke up this morning feeling completely exhausted and unmotivated. I was so unmotivated that I didn’t get up and moving until extremely late. However, once I drug myself out of bed I did do my daily workouts. Unfortunately, I’m a bit angry with myself because I know that I did not do them at a 100%. If I’m being completely honest with myself, and well part of the reason I started this blog was to be completely honest with myself on this journey, I completely half assed the workouts. So, I’m feeling a little guilty about it, but I did get up and move and I know that I am going to have bad days, and today for workouts it’s been a not so great day. Tomorrow is another day, and I will not half ass the work.

I have been behind on my daily steps today, between getting up late, and being in the kitchen cooking there wasn’t a lot of walking going on. I did make amends for that and hit the treadmill for 45 minutes. I walked at my normal pace, and enjoyed being active for a while.

Here’s hoping tomorrow I’m motivated to kick some serious butt! Even if I’m not I’m going to anyway.
